Preheat oven to 350°F. Combine graham cracker crumbs, melted butter, and sugar. Press mixture into bottom of a 9-inch springform pan. Bake for 10 minutes and allow to cool.

In a skillet over medium heat, cook apples with brown sugar, cinnamon, nutmeg, and butter until tender, approximately 10 minutes. Set aside to cool slightly.

In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Spread apple filling evenly over cooled crust. Pour cheesecake batter over apples and smooth surface. Bake for 55-60 minutes or until center is nearly set. Turn off oven and leave cheesecake inside with door ajar for 1 hour.

Refrigerate for at least 4 hours or overnight before serving chilled.
