Soft cheese tortellini paired with juicy shrimp in a luscious cream and Parmesan sauce with garlic.

# What You'll Need:

→ Seafood

01 - 12 ounces raw, peeled, and deveined shrimp

→ Pasta

02 - 9 ounces fresh or refrigerated cheese tortellini

→ Oils and Fats

03 - 1 tablespoon extra virgin olive oil
04 - 3 tablespoons unsalted butter

→ Dairy

05 - 1 cup heavy cream
06 - 3/4 cup freshly grated Parmesan cheese

→ Produce

07 - 3 garlic cloves, finely minced
08 - 2 tablespoons fresh flat-leaf parsley, chopped

→ Seasonings

09 - 1/2 teaspoon sea salt, divided
10 - 1/4 teaspoon freshly ground black pepper, divided

# Steps to Follow:

01 - Bring a large pot of salted water to a rolling boil. Add cheese tortellini and cook according to package instructions until just al dente. Drain and set aside.
02 - Pat shrimp dry with paper towels. Heat olive oil in a large skillet over medium heat until shimmering. Arrange shrimp in a single layer, season with half the salt and pepper. Cook undisturbed for 2 to 3 minutes until shrimp curl and turn opaque on one side. Flip and cook 1 to 2 more minutes. Remove shrimp to a plate.
03 - Reduce heat to medium-low and melt butter in the skillet. Scrape up browned bits from shrimp. Add minced garlic and sauté while stirring for about 1 minute until fragrant but not browned. Slowly pour in heavy cream, stirring constantly. Gradually whisk in grated Parmesan cheese until sauce is smooth. Simmer gently for 3 to 4 minutes until slightly thickened.
04 - Return shrimp and any collected juices to the skillet. Toss to coat in sauce. Gently fold in cooked tortellini ensuring all pieces are evenly coated. Heat briefly until warmed through.
05 - Remove skillet from heat. Sprinkle chopped fresh parsley over the dish and add extra Parmesan if desired. Serve immediately for optimal creaminess.

# Additional Notes:

01 - Pat shrimp completely dry before cooking to achieve a perfect sear and maintain tenderness.
02 - Use freshly grated Parmesan cheese for the richest flavor and smoothest sauce texture.
03 - Warm serving bowls to keep the sauce creamy longer.
