Cheesy Potato Burritos Beef (Print Version)

Crispy tater tots, beef, and blended cheeses wrapped in warm tortillas with creamy chipotle sauce and fresh toppings.

# What You'll Need:

→ Filling

01 - 1 pound ground beef
02 - 2 cups frozen tater tots
03 - 1 cup shredded cheddar cheese
04 - 1 cup shredded Monterey Jack cheese
05 - Salt and freshly ground black pepper, to taste

→ Tortilla and Assembly

06 - 4 large flour tortillas
07 - 1/2 cup sour cream
08 - 1/4 cup chipotle sauce

→ Optional Garnishes

09 - Diced fresh tomatoes
10 - Chopped green onions
11 - Fresh cilantro leaves

# Steps to Follow:

01 - Preheat the oven to the temperature specified on the tater tots package. Arrange the tater tots on a baking sheet in a single layer and bake according to package directions until golden brown and crisp.
02 - Heat a skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through. Season with salt and freshly ground black pepper. Drain any excess fat.
03 - In a large mixing bowl, combine the cooked ground beef, baked tater tots, shredded cheddar, and shredded Monterey Jack cheese. Gently crush the tater tots as you mix so the filling binds together.
04 - Heat each flour tortilla briefly in a dry skillet or microwave until soft and pliable to prevent cracking during assembly.
05 - Lay each tortilla flat and spoon the beef and potato mixture down the center. Drizzle with chipotle sauce and add a dollop of sour cream.
06 - Fold in the sides of the tortilla and roll tightly from the bottom up to form a burrito. Place seam side down in a baking dish. Sprinkle with reserved cheese if desired and bake in the oven at 375°F until the cheese on top is melted and the burritos are warmed through, about 8–10 minutes.
07 - Remove the dish from the oven. Top with diced tomatoes, chopped green onions, and fresh cilantro as desired. Serve warm with extra sour cream and chipotle sauce on the side.

# Additional Notes:

01 - For a crispier texture, bake the burritos uncovered so the tortilla edges turn golden.
02 - Slightly crushing the tater tots helps bind the filling for cohesive rolling.
03 - Warm tortillas before assembling to prevent tearing and achieve a tight roll.
