In a mixing bowl, combine Greek yogurt with honey or maple syrup and vanilla extract if using. Stir until fully integrated and smooth.

Line a rimmed baking sheet with parchment paper. Spread the yogurt mixture evenly on the prepared sheet to about 1/4 inch thick.

Evenly scatter mixed berries and banana slices over the yogurt base. If desired, sprinkle granola or nuts on top for added texture.

Transfer the baking sheet to the freezer and allow to freeze for at least 3 to 4 hours until the yogurt is completely set and firm.

Remove from the freezer and let stand for 2 to 3 minutes. Using a sharp knife, slice or break into pieces. Serve immediately or store in an airtight container in the freezer.
