Lasagna Soup with Cheese (Print Version)

# What You'll Need:

01 - 0.5 lb lean ground beef
02 - 0.5 lb Italian sausage

15 - Salt and freshly ground black pepper, to taste

16 - 9 lasagna noodles, broken into pieces

→ Cheese

17 - 10 oz ricotta cheese (or cottage cheese)
18 - 1 cup shredded mozzarella cheese
19 - 0.5 cup freshly grated Parmesan cheese

# Steps to Follow:

01 - Over medium-high heat, cook ground beef and Italian sausage in a large pot until browned. Season with salt and pepper. Drain excess fat and set meat aside.
02 - In the same pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook 1-2 minutes until fragrant.
03 - Add tomato paste, marinara sauce, red pepper flakes, parsley, oregano, basil, and chicken broth to the pot. Return cooked meat to the pot and stir to combine.
04 - Bring soup to a boil, add broken lasagna noodles, then reduce heat to medium-low. Cook, stirring occasionally, until noodles are tender, 10-12 minutes. Add fresh spinach during the last few minutes.
05 - In a bowl, blend ricotta, mozzarella, and Parmesan cheeses until smooth for topping.
06 - Ladle hot soup into bowls, top each with a dollop of cheese mixture, and garnish with fresh basil leaves. Serve immediately.
