In a large skillet over medium heat, cook ground beef and diced onion together. Break up beef with a wooden spoon and cook until no pink remains. Drain excess fat.

Add Manwich sauce and Velveeta cubes to the browned beef. Stir constantly until cheese is fully melted and mixture is smooth.

Fold cooked corkscrew pasta into the beef and cheese mixture until evenly coated.

Pour the mixture into a greased 9 by 13-inch baking dish. Spread evenly and sprinkle shredded Colby Jack cheese over the top.

Bake in a preheated oven at 175°C (350°F) for 15 minutes until cheese is melted and edges are bubbling. Let rest for 5 minutes before serving.
