01 - 1 pound ground beef (80/20 lean-to-fat ratio)

02 - 8 soft flour tortillas

→ Cheese

03 - 8 slices American cheese

04 - ½ cup diced white or sweet onion
05 - ½ cup sliced dill pickles
06 - 1 cup shredded iceberg or romaine lettuce

→ Sauce

07 - ⅓ cup mayonnaise
08 - 2 tablespoons yellow mustard
09 - 1 teaspoon white vinegar
10 - 1 teaspoon powdered erythritol (confectioners’ type sugar substitute)
11 - 1 teaspoon smoked paprika

→ Seasonings

12 - Salt and freshly ground black pepper, to taste

# Steps to Follow:

01 - Heat a griddle or large skillet over medium-high heat until it is very hot to ensure the burgers sear and develop crispy edges.
02 - In a small bowl, whisk together mayonnaise, yellow mustard, smoked paprika, white vinegar, and powdered erythritol until completely smooth. Set aside.
03 - Dice the onions, slice the pickles, and shred the lettuce. Keep toppings ready for quick assembly.
04 - Divide ground beef into eight equal portions and gently roll into balls. Place onto the hot griddle, then smash each firmly using a spatula or burger press. Season with salt and pepper. Cook for 2 to 3 minutes until edges are crisp. Flip, immediately top each patty with a slice of American cheese, and cook for an additional 1 minute until cheese melts.
05 - Place each flour tortilla on the griddle and warm for 30 seconds per side until soft and slightly toasted to prevent tearing.
