Heat a large skillet over medium heat. Add 1 tablespoon butter and the olive oil. Once melted, add the halved baby potatoes. Season with salt, pepper, rosemary, and thyme. Cook undisturbed for several minutes, stirring occasionally, until potatoes develop a golden, crispy crust and become fork-tender, about 10–12 minutes. Transfer potatoes to a warm plate.

In the same skillet, add 1 tablespoon butter. Arrange the steak bites in a single layer, working in batches if necessary. Season with salt and pepper. Sear for 2 to 3 minutes per side until a brown crust forms and desired doneness is reached. Remove from pan and keep warm with potatoes.

Reduce heat to low and add remaining 1 tablespoon butter to the skillet. Stir in minced garlic and cook, stirring constantly, until the garlic is fragrant and lightly golden, about 1 minute.

Return steak bites and potatoes to the skillet. Toss gently to coat with garlic butter sauce evenly. Remove from heat, sprinkle with chopped fresh parsley, and serve immediately warm.
