Knusprig gebackene Teigtaschen mit cremigem Mozzarella und würziger Tomatensauce, ideal für Snack oder Familienabend.

# What You'll Need:

→ Dough

01 - 1 package refrigerated pizza dough (or croissant dough for flakier texture), fresh and pliable

→ Sauce

02 - 1 tablespoon thick pizza or marinara sauce per pocket

→ Cheese

03 - Freshly grated mozzarella, approximately 28 g (1 ounce) per pocket
04 - Grated Parmesan cheese, to taste, preferably Parmigiano Reggiano or Grana Padano

→ Filling

05 - Sliced salami or cooked Italian sausage, finely chopped, optional
06 - Chopped bell peppers, olives, or mushrooms, use seasonal fresh vegetables
07 - Italian herbs or pizza seasoning, such as dried oregano, to taste

→ Finishing

08 - 1 fresh egg, beaten, for egg wash
09 - 1 teaspoon extra virgin olive oil, for brushing

# Steps to Follow:

01 - Preheat the oven to 390°F (200°C) with convection setting or set Airfryer to 375°F (190°C). Line a baking sheet with parchment paper if using the oven to prevent sticking.
02 - On a lightly floured surface, roll the dough to about 0.2 inches (5 mm) thickness. Cut into rectangles or circles approximately 4.7 by 3.1 inches (12 by 8 cm) for optimal filling and closure.
03 - Place 1 tablespoon of pizza sauce in the center of each dough piece. Add a generous handful of grated mozzarella, a sprinkle of Parmesan, and desired fillings such as salami or vegetables, leaving about a 0.4 inch (1 cm) border clear.
04 - Fold the dough over the filling to form a pocket. Press edges firmly with a fork to seal completely, preventing leakage during baking. Arrange pockets on the prepared baking sheet with space between each.
05 - Brush each pocket with the beaten egg for a golden crust. Optionally sprinkle pizza seasoning, garlic powder, or dried oregano. Drizzle lightly with olive oil to enhance browning and shine.
06 - Bake on the middle oven rack for about 15 minutes until golden brown, or airfry at 375°F (190°C) for approximately 8 minutes. Monitor to avoid burning.
07 - Allow pockets to cool for a few minutes. Serve warm with extra tomato sauce or a dip of choice for best melted cheese experience.

01 - Pockets freeze well uncooked; freeze individually on parchment then store in an airtight bag. Bake directly from frozen at 390°F (200°C) until golden.
